White Wine-Herb Marinade with Tomatoes and Feta

Ingredients

Based on 6 servings per recipe.

  • 1 pound chicken, fish, or other meat
  • 1 cup dry white wine
  • 1/2 cup lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons fresh oregano, minced
  • 1 tablespoon fresh thyme, minced
  • 3 ounces crumbled feta cheese
  • 2 roma tomatoes, seeded and chopped

Preparation

  1. In a large bowl or big zip lock bag, mix together wine, lemon juice, garlic, oregano, and thyme.
  2. Add your protein of choice, cover or close tightly and chill for at least 30 minutes or up to a day; stir or turn occasionally to coat evenly with marinade.
  3. Drain protein food and discard the marinade.
  4. Grill protein over indirect heat.
  5. Sprinkle cooked protein with tomatoes and feta.
