Desserts, Low Phosphorus, Low Potassium, Low Sodium

Ingredients

Based on 6 servings per recipe.

  • 2 cups mascarpone cheese
  • 1/2 cup + 2 teaspoons sugar
  • 1 tablespoon orange or lemon zest
  • 1 pint strawberries
  • 1/4 cup balsamic vinegar (or marsala wine)

Preparation

  1. Mix cheese, 1/2 cup sugar, and citrus zest until smooth and combined.
  2. Mix berries with sugar and balsamic vinegar and let marinade for at least 10 minutes.
  3. Spoon berries into dessert dishes and then top each with mascarpone and more berries.

About This Recipe

Marscapone cheese is soft and creamy, but you can try ricotta if you cannot find it. The wine or vinegar adds a tart depth to offset the sweetness of the berries.
