Sweet and Savory Baked Chicken

Ingredients

Based on 6 servings per recipe.

  • 2-3 pounds chicken pieces
  • 2 tablespoons olive oil
  • pepper to taste
  • 1 onion, sliced
  • 8 garlic cloves, peeled
  • 2 bay leaves
  • 2 cups red wine
  • 6-8 fresh figs or 2-3 fresh pears
  • juice from 1 lemon

Preparation

  1. Preheat oven to 350 degrees.
  2. Rub chicken with olive oil and pepper.
  3. Put onion slices, bay leaves, and garlic in a shallow roasting pan.
  4. Place figs and chicken pieces on top of onions and garlic. Pour wine over entire mixture and cover.
  5. Bake 50-60 minutes, until chicken registers 165 degrees, or until juices run clear from the thigh.
  6. To serve, remove bay leaves and arrange chicken and fruit on a platter and drizzle with lemon juice.
