Roasted Garlic Parsnips

- 3-4 large parsnips, sliced into 1/4 inch chunks
- 8 garlic cloves, peeled and sliced
- 1/2 large onion, sliced
- 1 tablespoon fresh or 1 teaspoon dry thyme
- 3 tablespoons olive oil
Preparation

Heat oven to 350 degrees.

Put parsnips in casserole or baking dish, add 1/4 cup water and cover with lid or foil.

Bake 20-25 minutes.

Meanwhile, saute onion, garlic, olive oil, and thyme.

Add to casserole and bake 20-30 minutes, til tender.
