Raspberry Bavarian Pie

Ingredients

Based on 12 servings per recipe.

  • 1/3 cup butter
  • 2 1/2 tablespoons sugar
  • 1 egg yolk
  • 1 cup flour
  • 1/3 cup almonds, finely chopped
  • 2 cups fresh raspberries, mashed
  • 2 egg whites
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1 cup whipping cream

Preparation

  1. Preheat oven to 400 degrees.
  2. Grease a 10-inch pie pan.
  3. Cream butter and sugar until fluffy.
  4. Add egg yolk and beat thoroughly.
  5. Mix in flour and almonds.
  6. Press into prepared pie pan and bake 12 minutes.
  7. Cool.
  8. Place ingredients for filling, except whipping cream, in large bowl.
  9. Beat until mixture thickens and expands in volume, up to 15 minutes.
  10. Whip cream and fold into raspberry mixture.
  11. Pile into pastry and freeze at least 8 hours.

Tip: Try this recipe with raspberries, strawberries, blackberries, blueberries or a mix of berries.
