Oven Fried Fish

Ingredients

Based on 4 servings per recipe.

  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 3 tablespoons Mrs. Dash Garlic & Herb Blend
  • 1 1/2 tablespoons cumin
  • 2 teaspoons Mrs. Dash Extra Spicy Blend
  • 1/2 teaspoon grated lemon zest
  • 1/3 cup corn meal
  • 1 to 1 1/4 pounds catfish or other white fish filets

Preparation

  1. Preheat oven to 400 degrees.
  2. Combine lemon juice, olive oil, 1 Tbsp Mrs. Dash® Garlic & Herb, cumin and 1 tsp Mrs. Dash® Extra Spicy in a small container with lid.
  3. Shake well to blend ingredients.
  4. Pour mixture into shallow bowl; coat fish on both sides with lemon juice mixture.
  5. Combine corn meal, remaining Mrs. Dash® Seasoning Blends, and lemon rind. Mix to blend.
  6. Coat fish on both sides with corn meal mixture.
  7. Bake for 20 to 25 minutes or until fish flakes easily with a fork.
  8. Serve with additional lemon juice and hot pepper sauce, if desired.
