Hearty Mashed Potatoes

Vegetarian, Low Phosphorus, Low Potassium, Low Protein, Low Sodium

Ingredients

Based on 8 servings per recipe.

  • 2 pounds potatoes
  • 1/4 cup unsalted butter
  • 1/2 cup milk

Preparation

  1. Peel potatoes and slice thinly, about 1/8 inch thick.
  2. Rinse well.
  3. Place sliced potatoes in a large pot of water so that there is at least 4 times more water than potatoes (about 9 quarts of water).
  4. Soak for at least 1 hour (If you are not concerned with your potassium levels you may skip the soaking).
  5. Drain and rinse soaked potatoes.
  6. Place soaked potatoes in a large stockpot.
  7. Fill rest of pot with water.
  8. Bring to a boil then boil for 10 minutes.
  9. Discard water.
  10. Transfer boiled potatoes to a large mixing bowl.
  11. Mash lightly with a potato masher or use a hand mixer on low speed until just mashed.
  12. Mix in butter.
  13. Add milk slowly until desired consistency is reached. Be careful not to over mash or the potatoes may develop a glue-like consistency.

About This Recipe

Soaking the potatoes before cooking can reduce the potassium by half. Stick to 1/2 cup portion size to keep potassium intake within range.
